  • 2 pounds carrots
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt (or more to taste)
  • ⅛ teaspoon black pepper
  • ½ cup water
  • ¼ cup honey
  • 12 tablespoons hot sauce (gochujang, harissa, sriracha, or Tabasco)
  • ½ teaspoon smoked paprika
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic

Instructions

  1. Preheat oven to 425°F (220°C). Peel and chop the carrots into bite-sized pieces.
  2. Toss the carrots with olive oil, salt, and black pepper. Spread on a baking tray and add ½ cup water.
  3. Bake for 20 minutes. Meanwhile, in a saucepan, combine honey, hot sauce, smoked paprika, and salt; simmer for 2-3 minutes before stirring in apple cider vinegar.
  4. After baking, drain excess water from the tray and toss carrots with half of the hot honey glaze.
  5. Add crushed garlic and bake for another 20 minutes until caramelized. Serve with reserved glaze.
