  • 4 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 cup cooked corned beef, diced (or turkey)
  • 1 cup diced potatoes
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • 1 cup shredded Swiss cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant.
  2. Add beef broth and bring it to a simmer. Stir in diced potatoes, rinsed sauerkraut, diced corned beef (or turkey), caraway seeds, and thyme. Cook for 15-20 minutes until the potatoes are tender.
  3. Lower the heat and stir in heavy cream and shredded Swiss cheese until melted and creamy.
  4. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
