  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 1 celery stalk, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon tomato paste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Season the red snapper fillets with salt and pepper on both sides.
  2. In a skillet over medium-high heat, heat the olive oil and cook the seasoned fish for about 3-4 minutes per side until cooked through. Remove from skillet and set aside.
  3. In the same skillet, reduce heat to medium, melt the butter, then add onion, bell pepper, and celery. Sauté for about 5 minutes until softened.
  4. Stir in garlic, paprika, cayenne pepper, thyme, and oregano; cook until fragrant.
  5. Pour in chicken broth while scraping up bits from the skillet; let reduce for about 2-3 minutes.
  6. Add heavy cream, tomato paste, and lemon juice; simmer until thickened (about 5 minutes).
  7. Return the fish to the skillet and spoon sauce over it; warm through for another 3 minutes.
  8. Serve garnished with fresh parsley.
