  • 2 tablespoons gochujang paste
  • 1 tablespoon soy sauce
  • 2 teaspoons fish sauce or additional soy sauce
  • 2 tablespoons chili oil
  • 2 garlic cloves, crushed
  • 1 tablespoon ginger, grated or 2 teaspoons ginger paste
  • 1 lemongrass stalk, crushed and chopped into 3 pieces
  • 14oz can of coconut milk
  • 5 cups vegetable or chicken stock
  • 200g noodles of your choice
  • 2 heads of pak choi, sliced
  • 4 scallions finely sliced
  • Handful of cilantro leaves
  • 1 lime sliced into wedges

Instructions

  1. In a large saucepan over medium heat, combine 2 tablespoons of gochujang paste, 1 tablespoon soy sauce, 2 teaspoons fish sauce, and 2 tablespoons chili oil. Stir for 1-2 minutes.
  2. Add 2 crushed garlic cloves and 1 tablespoon grated ginger, cooking for another minute.
  3. Pour in a 14oz can of coconut milk, 5 cups of vegetable or chicken stock, and lemongrass pieces. Bring to a simmer and cook for 5 minutes.
  4. Add 200g noodles to the broth and cook according to package instructions (about 4 minutes). Stir in sliced pak choi until bright green.
  5. Serve hot, garnished with lime wedges, scallions, and cilantro leaves.
