  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a small springform pan.
  2. In a mixing bowl, beat the eggs and sugar until fluffy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and maple syrup to the mixture and stir until combined.
  4. In a separate bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold into the wet ingredients until just combined.
  5. Pour the batter into the prepared springform pan and bake for about 45 minutes or until a toothpick inserted comes out clean but moist.
  6. Allow the cake to cool completely before adding the glaze made from powdered sugar, milk, and maple syrup.
