  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans (for topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk together pumpkin puree, milk, melted butter or vegetable oil, and vanilla until well combined. Mix with dry ingredients to form a thick batter.
  4. Transfer the batter to an 8-inch casserole dish.
  5. In a separate bowl, combine granulated sugar, brown sugar, and chopped pecans; sprinkle over the batter. Pour very hot water on top without stirring.
  6. Bake for about 40 minutes or until the middle is set. Allow cooling for 5–10 minutes before serving.
