  • 1 cup (8 ounces) mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs, divided
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch cloves
  • Pinch coarse kosher salt
  • 1 (15-ounce) can pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your spelt pie crust in a 9-inch pie dish.
  2. In a large mixing bowl, beat together room-temperature mascarpone cheese and granulated sugar until smooth. Add 2 eggs and vanilla extract; mix until well combined.
  3. Stir in pumpkin puree, light brown sugar, cinnamon, nutmeg, cloves, kosher salt, and remaining eggs. Mix thoroughly.
  4. Pour the filling into the prepared spelt crust and smooth the top with a rubber spatula. Bake for about 60–75 minutes or until set.
