  • 350g pumpkin, peeled and diced
  • 500g gnocchi
  • 50g blue cheese or soft goat's cheese
  • 6g sage leaves
  • 400ml vegetable stock
  • ¼ cup dairy cream
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Instructions

  1. Peel and dice pumpkin; boil until tender (about 10 minutes), then drain.
  2. Boil water again; add gnocchi until they float (2-3 minutes). Drain and mix with pumpkin.
  3. Heat vegetable stock in a saucepan; stir in dairy cream and crumble in cheese until melted.
  4. Combine the creamy mixture with the gnocchi and pumpkin; add chopped sage.
  5. Preheat oven to 180°C (350°F). Transfer mixture to a baking dish, top with shredded cheese and pecans.
  6. Bake for 20-25 minutes until golden.
