Instructions

  1. Blend all crepe ingredients until smooth; allow to rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease it with butter.
  3. Pour about ¼ cup batter into the pan, tilting to spread evenly. Cook until golden brown, about 1–1½ minutes per side.
  4. Repeat with remaining batter, greasing the pan as needed.
  5. For the filling, mix softened cream cheese, confectioners' sugar, maple syrup, and heavy cream until smooth.
  6. Fill each crepe with the mixture, fold over, and serve warm.
