  • 1 cup canned pumpkin puree
  • ½ cup white granulated sugar
  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, mix eggs, pumpkin puree, sugars, and vegetable oil until just combined.
  4. Gently fold the wet ingredients into the dry ingredients using a rubber spatula until no dry flour is visible.
  5. Fold in the chocolate chips evenly throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup two-thirds full.
  7. Bake for about 16–20 minutes or until a toothpick inserted comes out clean. Let cool for a few minutes before transferring to a wire rack.
