  • ¾ cup granulated sugar

  • 4 oz cream cheese (room temperature)
  • 4 tbsp unsalted butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a mixing bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix canola oil, granulated sugar, brown sugar, and eggs until smooth. Stir in pumpkin puree.
  4. Gradually combine the dry ingredients with the wet ingredients using a spatula until just mixed.
  5. Pour batter into the prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. While cooling, beat together cream cheese and butter until smooth; add powdered sugar gradually until well combined.
