  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs

Instructions

  1. Peel and grate the potatoes into a mixing bowl. Season with salt and black pepper, mix well, and let sit for about 10 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. In another bowl, combine mozzarella and cheddar cheese until well mixed.
  4. Take a handful of grated potatoes, flatten it in your hand, place a tablespoon of cheese mixture in the center, fold over to encase the cheese, and shape into sticks.
  5. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each stick first into flour, then egg, followed by breadcrumbs for an even coating.
  6. Arrange coated sticks on a lined baking sheet and bake for 20-25 minutes or until golden brown.
