  • 1 firm pear
  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry
  • 1 egg (for egg wash)
  • Pinch of flaky salt or chopped rosemary (optional)

Instructions

  1. In a small pot, combine apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves. Add the peeled pear and simmer for 20-25 minutes until tender. Allow to cool in the liquid.
  2. Slice the brie horizontally into two discs and place the cooled pear on the bottom half. Press the top half to seal.
  3. Roll out thawed puff pastry on a floured surface and wrap it around the brie and pear securely. Seal edges tightly.
  4. Transfer to a parchment-lined baking sheet, brush with beaten egg, sprinkle with salt or rosemary if desired, and bake at 200°C (392°F) for 20-25 minutes until golden brown. Let rest for 5 minutes before serving.
