  • ½ cup cocoa powder
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ cup hot water
  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 2 cups shredded coconut (sweetened or unsweetened)
  • 23 drops pink food coloring

Instructions

  1. Preheat your oven to 175°C (350°F) and prepare a greased 9×13-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. Cream softened butter and sugar until fluffy. Add eggs and vanilla; mix well.
  4. Gradually combine dry ingredients with buttermilk and hot water until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes; cool completely.
  6. Whip the heavy cream with powdered sugar and vanilla until fluffy; spread over the cooled cake.
  7. Mix shredded coconut with pink food coloring and sprinkle on top of the frosting.
  8. Chill for at least one hour before slicing into squares.
