  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 medium pineapple, peeled, cored, and diced
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetarian oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish

Instructions

  1. Rinse jasmine rice under cold water until clear.
  2. In a medium saucepan, combine rinsed rice with 4 cups water and a pinch of salt. Bring to boil, then reduce heat and simmer covered for 15-20 minutes until tender. Let sit covered for an additional 5 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned (5-7 minutes).
  4. Stir in minced garlic and ginger; cook for another minute.
  5. Add diced red bell pepper and frozen peas; stir-fry for about 3-4 minutes until tender.
  6. Fold in diced pineapple; cook for an additional 2-3 minutes.
  7. Mix soy sauce, vegetarian oyster sauce, and sesame oil in a bowl; pour over chicken mixture and simmer for another 2-3 minutes.
  8. Gently fold cooked rice into the skillet until well combined; adjust seasoning as needed.
  9. Serve immediately garnished with chopped green onions.
