  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon black pepper
  • 1 tablespoon salt (adjust to taste)
  • 2 tablespoons fresh lemon juice
  • 1 cup chicken broth
  • 1 cup dried apricots or prunes (or a mix)
  • ½ cup toasted almond slivers
  • Fresh parsley or cilantro for garnish

Instructions

  1. Rinse chicken under cold water and pat dry.
  2. Heat olive oil in a large skillet over medium heat; sauté sliced onions until golden brown.
  3. Add minced garlic and spices; cook until fragrant.
  4. Brown the chicken on each side until golden.
  5. Deglaze with lemon juice; scrape flavorful bits from the pan.
