  • 1 lb. Red Kidney Beans (soaked overnight or 1 can)
  • 1 lb. Cannellini Beans (soaked overnight or 1 can)
  • 1 qt. Tomato Juice
  • 1 can Diced Tomatoes (15 oz.)
  • 3 Carrots (sliced)
  • 3 Celery Stalks (diced)
  • 1 Onion (diced)
  • 46 cloves Garlic (minced)
  • 8 cups Chicken Stock
  • 1 lb. Ditalini Pasta
  • Seasonings: Salt, Pepper, Thyme, Basil, Oregano

Instructions

  1. Heat a heavy pot over medium-high heat.
  2. Prep all ingredients while the pot heats up.
  3. Add oil and cook Kielbasa until browned.
  4. Stir in onion until soft, then add carrots and celery until tender.
  5. Mix in garlic until fragrant.
  6. Season with salt, pepper, thyme, basil, and oregano; cook for a minute.
  7. Pour in tomato juice, diced tomatoes, and chicken stock; bring to boil.
  8. Lower to simmer and add soaked beans; cook for 45-60 minutes until tender.
  9. Add Ditalini pasta and cook for an additional 10-12 minutes until al dente.
  10. Adjust seasoning before serving hot.
