  • 3 tablespoons olive oil (divided)
  • 1 pound ground beef
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire roasted tomatoes (do not drain)
  • 1 tablespoon Italian seasoning
  • 1 cup dry pasta (ditalini)
  • 15 ounces red kidney beans (drained and rinsed)
  • 15 ounces cannellini beans (drained and rinsed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh parsley (chopped finely)

Instructions

  1. In a large Dutch oven, heat 1 tablespoon of olive oil over medium-high heat and brown the ground beef. Remove and drain excess fat.
  2. In the same pot, add 2 tablespoons of olive oil and sauté diced onion, carrots, and celery until softened.
  3. Stir in minced garlic for about 30 seconds until fragrant.
  4. Add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, browned meat, and ditalini pasta.
  5. Bring to boil, reduce heat to low, cover, and simmer for 15 minutes until vegetables are tender and pasta is cooked through.
  6. Stir in rinsed kidney beans and cannellini beans; cook until heated through.
  7. Season with salt and pepper; garnish with chopped parsley before serving.
