  • 2 carrots, chopped
  • 2 celery stalks, chopped

  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; cook until softened (5-7 minutes). Stir in minced garlic, oregano, basil, and red pepper flakes; cook for 1 more minute.
  3. Pour in the broth and crushed tomatoes; add rinsed beans.
  4. Bring to a boil then reduce heat; let simmer for 15 minutes to meld flavors.
  5. Stir in ditalini pasta and cook according to package directions (about 8-10 minutes).
  6. Season with salt and pepper to taste before serving hot.
