  • 15 oz roasted artichokes (drained)
  • 15 oz can white cannellini beans (rinsed & drained)
  • 1/2 lemon (juiced and zested)
  • 2 tbsp olive oil
  • 2 tsp fresh thyme
  • 2 tsp fresh oregano
  • 2 tsp fresh basil
  • 1/4 tsp salt
  • Black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1/2 cup Italian cheese blend

Instructions

  1. In a food processor or blender, combine artichokes, white beans, lemon juice and zest, olive oil, thyme, basil, salt, pepper, and minced garlic. Pulse until well-blended.
  2. Add the Italian cheese blend and pulse until smooth.
  3. Transfer the dip to a bowl, cover it, and refrigerate for at least one hour before serving.
  4. Serve chilled with your choice of dippers such as fresh veggies or crackers.
