  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch cake tin.
  2. In a bowl, combine flour, baking powder, ground cardamom, and salt.
  3. Cream together softened butter and light brown sugar until fluffy. Add eggs, vanilla extract, orange zest, and fresh orange juice; mix well.
  4. Fold in chopped dates before gradually combining the dry mixture with the wet ingredients.
  5. Pour the batter into the prepared cake tin and bake for about 40–45 minutes or until a toothpick comes out clean.
  6. For the honey drizzle, warm honey with fresh orange juice until mixed. Once the cake is cool, drizzle the mixture over it.
