  • 6 strands of saffron
  • ¼ cup boiling water
  • 1 white onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • Salt and pepper (to taste)
  • ½ cup mixed dried fruits (e.g., apricots, raisins)
  • ¼ cup almonds (toasted and chopped)
  • ¼ cup pistachios (toasted and chopped)

Instructions

  1. Steep saffron strands in boiling water for about 10 minutes.
  2. Rinse Basmati rice under cold water until clear to remove excess starch.
  3. Heat olive oil in a medium saucepan over medium-low heat and cook the onion until soft.
  4. Add minced garlic and spices; cook until fragrant.
  5. Stir in rinsed rice and coat with the spice mixture; add saffron-infused water and season with salt and pepper.
  6. Bring to a boil, then reduce heat and cover; simmer for 15-18 minutes until absorbed.
  7. Turn off the heat, lay dried fruits on top without stirring, cover, and let sit for 10 minutes.
  8. Fluff with a fork and mix in toasted almonds and pistachios before serving.
