  • 1 cup onion
  • 1 cup celery
  • 1 cup carrot
  • 1 tablespoon garlic
  • 3 cans beef broth (14.5 ounces each)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 cup ditalini pasta
  • 1 can kidney beans (15.5 ounces)
  • 1 can cannellini beans (15.5 ounces)

Instructions

  1. Prepare ingredients: Chop onion, celery, carrots, and mince garlic.
  2. Rinse and drain kidney and cannellini beans.
  3. In a large pot over medium-high heat, brown the ground beef until fully cooked; drain excess fat if needed.
  4. Sauté chopped vegetables in the pot for about 5 minutes until softened, then add minced garlic and Italian seasoning for an additional minute.
  5. Pour in beef broth, diced tomatoes, tomato sauce, salt, pepper, and add ditalini pasta. Bring to a boil.
  6. Reduce heat to medium-low; stir occasionally while simmering for about 7 minutes before adding rinsed beans. Cook until pasta is tender (about another 5-8 minutes).
