  • 1 tbsp olive oil
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 tbsp tomato paste
  • 24 oz jar red pasta sauce or marinara
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken
  • 3 cups fresh baby spinach
  • ½ cup shredded parmesan
  • 1 cup fresh ricotta
  • 1 cup shredded mozzarella

Instructions

  1. In a large Dutch oven, brown the ground beef over medium-high heat for about 8–10 minutes. Remove excess grease and set aside.
  2. Sauté the chopped onion until translucent (about 5 minutes), then add minced garlic and tomato paste; cook for an additional minute.
  3. Stir in red pasta sauce, broth, seasonings, and browned meat; bring to a low simmer.
  4. Add broken lasagna noodles and cover; simmer for about 20 minutes until noodles are tender. Stir in spinach last until wilted.
  5. Mix shredded parmesan into the soup before serving and top each bowl with ricotta-mozzarella mixture.
