  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil and sauté onions and garlic until translucent.
  2. Add carrots, potatoes, and celery; cook for about 5 minutes.
  3. Pour in chicken or beef broth and diced tomatoes. Stir in Italian seasoning along with salt and pepper.
  4. Bring to a boil and gently add meatballs. Reduce heat to simmer and cover for about 35 minutes.
  5. If using greens like spinach or kale, stir them in just before serving.
