  • 3 brown mushrooms (diced)
  • 68 oz chicken thighs (cut into bite-sized pieces)
  • 2 cups cooked white rice (day-old)
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 6 large eggs (divided)
  • 2 tablespoons milk (divided)
  • Salt to taste

Instructions

  1. In a non-stick skillet over medium heat, sauté diced onion and minced garlic until fragrant. Add diced mushrooms and mixed vegetables, cooking until tender.
  2. Add chicken pieces and cook until browned and fully cooked through. Stir in ketchup and soy sauce until well combined.
  3. Mix in the day-old cooked rice until heated through. Adjust seasoning with salt if necessary.
  4. In a mixing bowl, whisk together 4 eggs, 1 tablespoon milk, and salt. Pour egg mixture into a separate skillet over medium heat; cook until just set but slightly runny on top.
  5. Place a portion of rice mixture on one half of the omelet in the skillet, fold the other half over gently.
  6. Serve on a plate with additional ketchup drizzled on top and sprinkle with minced parsley.
