  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee or hot water
  • 1 cup unsalted butter (room temperature)
  • 2/3 cup Nutella
  • 3 cups powdered sugar
  • 1/4 cup cocoa powder
  • 3 tbsp heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, milk, vegetable oil, vanilla extract, and brewed coffee.
  4. Gradually combine wet ingredients into dry ingredients until just mixed.
  5. Fill each liner two-thirds full with batter and bake for about 18 minutes until a toothpick comes out clean.
  6. Cool cupcakes on a rack before frosting with Nutella buttercream made by mixing room temperature butter, Nutella, powdered sugar, cocoa powder, heavy cream, and vanilla extract.
