- 250 grams plain flour
- 2½ teaspoons baking powder
- ½ teaspoon bicarbonate of soda
- 100 grams caster sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 clementines (zest and juice)
- 125 milliliters full-fat milk
- 75 milliliters vegetable oil
- 1 large egg
- 175 grams dried cranberries
- 3 teaspoons demerara sugar (for topping)
- Preheat your oven to 200°C/180°C Fan/gas mark 6/400ºF. Prepare a muffin tin with liners.
- In a bowl, mix together flour, baking powder, bicarbonate of soda, caster sugar, cinnamon, and nutmeg.
- Grate the zest of the clementines into the dry mixture and then squeeze the juice into a measuring jug. Add milk until you reach a total of 200ml.
- Combine the vegetable oil and egg into the milk mixture and lightly beat.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the dried cranberries carefully.
- Spoon the batter into muffin cases and sprinkle with demerara sugar.
- Bake for about 20 minutes until golden brown.
