  • 1 package (17 oz) store-bought puff pastry (2 sheets), thawed
  • 1 ¼ cups pumpkin puree
  • ¼ cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon allspice
  • 2 egg yolks

Instructions

  1. Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine pumpkin puree, sugars, vanilla, spices, and egg yolks until well mixed.
  3. Roll out puff pastry on a floured surface and spread half of the filling on each sheet evenly.
  4. Cut the pastry into triangles and roll each triangle from the wide end to form crescents.
  5. Place rolled crescents on prepared baking sheets, spaced apart.
  6. Bake for about 15 minutes or until golden brown. Optionally dust with powdered sugar before serving.
