  • 1/2 cup sugar

  • 2 tbsp lemon juice

  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of muffin tin cups.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, lemon juice, lemon zest, and vanilla extract until fully combined.
  5. Spoon filling over crusts in muffin tin until nearly full.
  6. Bake for 20-25 minutes until set but slightly jiggly in the center.
  7. Allow to cool at room temperature before refrigerating for at least two hours.
