  • 1 ½ cups all-purpose flour
  • 4 tablespoons granulated sugar
  • ½ teaspoon fine sea salt
  • 12 tablespoons unsalted butter (cold, cut into pieces)
  • 3 tablespoons milk
  • Generous ½ cup homemade vanilla pudding
  • 2 cups diced assorted fresh fruit (berries, kiwi, grapes, cherries, peaches)
  • Optional: 2 tablespoons apricot preserves

Instructions

  1. In a food processor, combine flour, sugar, salt, and butter; pulse until coarse.
  2. Add half the milk; pulse until dough forms a ball. Chill in the refrigerator for at least 30 minutes.
  3. Preheat oven to 350°F. Portion dough into a mini muffin tin; press evenly into each well.
  4. Bake for 13-16 minutes until golden; cool on a rack.
  5. Fill each cooled shell with vanilla pudding and top with fresh fruit.
  6. Optionally glaze with melted apricot preserves mixed with water for shine.
