  • 3 boneless skinless chicken thighs
  • 12 oz gluten-free farfalle pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese
  • 1/4 cup diced sun-dried tomatoes
  • 1 cup fresh spinach
  • 3/4 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sun dried tomato oil (from the jar of sun dried tomatoes)
  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp Bob's Red Mill 1:1 gluten free flour
  • 2 tbsp tomato paste
  • Chopped fresh basil for garnish

Instructions

  1. Season chicken thighs with smoked paprika, Italian seasoning, salt, and pepper. Heat sun-dried tomato oil in a skillet over medium heat and cook until golden brown (5-7 minutes per side). Remove from heat and slice.
  2. Cook farfalle pasta in salted boiling water until al dente; drain and set aside.
  3. In the same skillet, melt butter and sauté dried shallots, garlic, and onion until fragrant. Stir in gluten-free flour and gradually add chicken broth while stirring.
  4. Once thickened, mix in heavy cream, parmesan cheese, sun-dried tomatoes, spinach, additional seasonings, and salt until heated through.
  5. Toss cooked pasta with sauce and serve hot, garnished with chopped basil.
