  • 2 roasted red peppers (finely diced)
  • ⅓ cup finely diced shallot
  • 2 garlic cloves (minced)
  • ½ cup extra-virgin olive oil
  • Juice and zest of 1 lemon
  • Kosher salt and black pepper to taste
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a large mixing bowl, combine the white beans, fresh herbs, roasted red peppers, shallot, garlic, olive oil, lemon juice and zest, salt, red pepper flakes, and black pepper. Mix thoroughly.
  2. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours or overnight for best flavor.
  3. Stir again before serving or transfer to an airtight container for storage.
