  • 1/4 cup maple sugar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon maple extract
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • For the Cream Filling: 1/4 cup unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixing bowl, cream together unsalted butter and maple sugar for about one minute until still slightly granular. Add powdered sugar and beat until light and fluffy.
  2. Mix in pure maple syrup and maple extract until well combined.
  3. In a separate bowl, whisk together flour, cornstarch, and salt before gradually adding it into the wet mixture to form dough.
  4. Wrap dough in plastic wrap and chill for at least 30 minutes.
  5. Preheat oven to 350°F (175°C). Roll out chilled dough to about an eighth inch thick on a floured surface and cut out shapes using a maple leaf cookie cutter.
  6. Bake for 8-10 minutes or until edges are lightly golden brown; cool completely on wire racks.
  7. For the cream filling, beat together butter, powdered sugar, maple syrup, vanilla extract, remaining maple extract, and salt until smooth.
  8. Assemble cookies by spreading cream filling between two cookies.
