  • 5 large eggs (separated)
  • 1 cup granulated sugar
  • 1 ½ tsp vanilla extract
  • ¼ cup whole milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • ½ cup heavy whipping cream
  • 1 cup heavy whipping cream (for topping)
  • ¼ cup powdered sugar
  • ½ cup mango puree
  • fresh mango (peeled and cut into small chunks)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Beat egg yolks with half of the sugar until fluffy; add vanilla and whole milk.
  3. Whisk together flour, baking powder, and salt; combine with wet ingredients.
  4. Whip egg whites until soft peaks form; gradually add remaining sugar until firm peaks form. Fold into batter.
  5. Pour batter into prepared dish and bake for about 25 minutes; cool completely.
  6. Mix sweetened condensed milk, evaporated milk, and heavy whipping cream in a bowl.
  7. Poke holes in cooled cake and pour milk mixture over it.
  8. Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form; spread over cake.
  9. Top with mango puree and fresh mango chunks; refrigerate for at least four hours before serving.
