  • 4 lamb shanks

  • 3 carrots, chopped

  • 6 garlic cloves, minced

  • 2 cups apple vinegar
  • 2 cups beef or lamb stock
  • 2 bay leaves
  • 2 sprigs rosemary
  • 3 sprigs thyme

Instructions

  1. Prep all ingredients: dice onions, chop carrots and celery, mince garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Season lamb shanks with salt and pepper.
  3. Sear lamb shanks until browned on all sides (about 3-4 minutes each), then set aside.
  4. In the same pot, sauté onion, carrots, celery, and garlic until softened (about 5 minutes).
  5. Stir in tomato paste, then add apple vinegar and broth along with bay leaves and herbs. Bring to a simmer.
  6. Return lamb shanks to the pot, ensuring they are submerged in liquid. Cover with a lid.
  7. Cook using your preferred method: bake at 325°F for 2-3 hours, slow cook on low for 6-8 hours, or pressure cook for about 45 minutes.
