  • ½ tsp salt
  • 1 can chickpeas
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp salt
  • ½ cup hummus
  • ½ small red onion
  • ⅓ cup chopped parsley
  • ⅓ cup vegan feta cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut 3-4 medium sweet potatoes in half lengthwise, score them in a rack pattern, and toss with olive oil and salt.
  3. Place the sweet potato halves skin-side up on a baking sheet and roast for 25-30 minutes until caramelized.
  4. Rinse and drain one can of chickpeas, then toss them with olive oil, paprika, and salt before spreading them on another baking sheet.
