  • ¼ cup granulated sugar (+ more for brûlée)
  • 1 lemons (zested)
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Prepare the lemons by rinsing them and scooping out the flesh.
  2. Extract the juice from the lemon flesh using a sieve to remove seeds and pulp.
  3. In a saucepan, combine heavy cream, sugar, and lemon zest over medium-low heat until thickened.
  4. Add lemon juice and vanilla extract, stirring until well combined.
  5. Strain the mixture for smoothness and let it cool for 10 minutes.
  6. Fill hollowed lemon halves with the mixture and chill in the fridge for at least 1-2 hours.
  7. Just before serving, sprinkle sugar on top and use a blowtorch to caramelize until golden brown.
