  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • ½ cup unsalted butter, melted
  • ¼ teaspoon salt
  • ½ cup fresh lemon juice
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon agar-agar powder
  • zest from 1 lemon
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 2 cups of old-fashioned oats, 1 cup of all-purpose flour, 1 cup of brown sugar, ½ cup melted unsalted butter, and ¼ teaspoon salt. Mix until crumbly.
  3. Press 2/3 of the mixture into a greased 9×13 inch baking pan.
  4. In another bowl, whisk together ½ cup fresh lemon juice, 1 cup granulated sugar, 2 tablespoons cornstarch, 1 teaspoon agar-agar powder, zest from one lemon, and 3 large eggs until smooth.
  5. Pour the lemon filling over the crust in the baking pan and sprinkle the remaining crumble mixture on top.
  6. Bake for about 38 minutes or until golden brown. Allow cooling before slicing into bars.
