  • 1 lb large shrimp, peeled and deveined
  • 12 oz orzo pasta
  • 4 oz crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • Juice and zest of 1 lemon
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 garlic clove, finely grated
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley and dill, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp with olive oil, salt, pepper, oregano, smoked paprika, and lemon zest in a mixing bowl; spread on the baking sheet.
  3. Roast shrimp for 8–10 minutes until opaque.
  4. Boil salted water in a large pot; cook orzo according to package instructions until al dente. Drain well.
  5. While hot, mix orzo with olive oil, lemon juice, garlic, and optional red pepper flakes.
  6. Fold in tomatoes, spinach, parsley, and dill until spinach wilts slightly.
  7. Gently mix in feta cheese; top with roasted shrimp before serving.
