  • 1 bunch (10 oz) fresh spinach
  • 1 clove garlic (minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and slice into 2-inch pieces.
  2. Bring water with salt to a boil in a pot. Blanch the spinach for about 30 seconds until wilted.
  3. Transfer the spinach to an ice bath immediately to preserve color and texture; squeeze out excess water.
  4. In a mixing bowl, combine cooled spinach with minced garlic, chopped green onion, soy sauce, salt, toasted sesame oil, and sesame seeds. Mix well.
  5. Serve as a side dish or enjoy chilled on its own.
