  • 1/3 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp key lime zest
  • 1 tbsp key lime juice
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 cup buttermilk
  • 3/4 cup powdered sugar
  • 2 tbsp key lime juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, cream together the softened butter and sugar until fluffy.
  3. Add eggs, key lime zest, key lime juice, and vanilla extract; mix until smooth.
  4. In another bowl, whisk together flour, salt, baking powder, and buttermilk.
  5. Gradually combine the dry mixture into the wet ingredients until just mixed (lumps are okay).
  6. Pour batter into prepared loaf pan and bake for about 45 minutes or until golden brown and a toothpick comes out clean.
  7. While baking, prepare the glaze by mixing powdered sugar and key lime juice until smooth.
  8. Cool bread for about 10 minutes before transferring to a tray; drizzle warm glaze over before slicing.
