  • 1 large apple (julienned)
  • 2 medium carrots (shredded)
  • 3/4 cup unsalted slivered almonds (toasted)
  • 3/4 cup shredded sharp white cheddar cheese
  • 1/3 cup sliced red onion
  • 1/2 cup olive oil
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp real maple syrup
  • 1 1/2 tsp dijon mustard

Instructions

  1. Prepare the Dressing: In a mixing bowl, whisk olive oil, lemon juice, apple cider vinegar, maple syrup, dijon mustard, salt, and pepper. Refrigerate while preparing the salad.
  2. Prepare the Kale: Remove stems from kale leaves. Rinse thoroughly and dry using a salad spinner. Slice kale into thin ribbons.
  3. Combine Ingredients: In a large bowl, mix kale with julienned apple, shredded carrots, toasted almonds, cheese, and red onion.
