  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 egg
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, onion, garlic, parsley, mint, oregano, cumin, salt, and pepper.
  2. Add the egg and combine gently; avoid overmixing.
  3. Shape into meatballs (about 20).
  4. Heat olive oil in a skillet over medium heat and cook meatballs until golden brown and cooked through (about 4-5 minutes per side).
  5. For tzatziki: Mix yogurt with grated cucumber (drained), garlic, lemon juice, olive oil, dill, salt, and pepper; chill for at least 15 minutes before serving.
