  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 large bell pepper, chopped into bite-sized pieces
  • 1/2 small onion, chopped into bite-sized pieces
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, minced
  • Salt and pepper to taste
  • 12 tablespoons avocado oil

Instructions

  1. Prepare your ingredients by chopping the bell pepper and onion, slicing the orange, and mincing the garlic and ginger.
  2. Heat avocado oil in a large skillet over medium-high heat, then add seasoned chicken thighs. Cook until browned on both sides (6-7 minutes each). Remove from skillet.
  3. Sauté bell pepper and onion in the same skillet for about 3-5 minutes until softened.
  4. Combine orange juice, marmalade, sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes in a bowl; mix well.
  5. Return chicken to the skillet, add sautéed vegetables and sauce mixture. Simmer for another 5-7 minutes until heated through.
