  • 1 cup sliced shallots
  • 1/4 cup olive oil
  • 1/4 cup apple juice vinegar
  • 1 teaspoon whole cumin seeds
  • 1/4 teaspoon whole celery seeds
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon fresh thyme
  • Kosher salt
  • Chopped celery leaves for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small saucepan, toast cumin seeds, celery seeds, and black pepper over medium heat until fragrant. Crush lightly with a pestle, then stir in apple juice vinegar and thyme.
  3. On a baking sheet, combine celery chunks, sliced mushrooms, and shallots. Drizzle with olive oil and season generously with salt and additional pepper. Toss to coat evenly.
  4. Roast for 15-20 minutes until celery is tender yet firm. Transfer to a mixing bowl; toss with the warm vinegar mixture and garnish with chopped celery leaves.
