  • 2 small onions (chopped)
  • 1 red bell pepper (chopped)
  • 23 jalapeno peppers (chopped; optional for spicy)
  • 2 stalks celery (chopped)
  • 6 cloves garlic (chopped)
  • 1 pound boneless, skinless chicken breast (chopped)
  • ½ pound shrimp (peeled and deveined)
  • 34 tomatoes (chopped; about a pound)
  • 1 tablespoon Cajun seasoning (or more to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces tomato sauce
  • 1 cup chicken stock
  • 1 cup white rice
  • 1 teaspoon olive oil (for garnish)
  • Chopped parsley for garnish
  • Your favorite hot sauce for serving

Instructions

  1. In a large pan, heat olive oil over medium heat. Sauté chopped onions, red bell pepper, jalapeños, and celery for 6–7 minutes until softened. Add garlic and chicken; cook until the chicken is no longer pink.
  2. Stir in chopped tomatoes and cook for 3 minutes. Add Cajun seasoning, salt, pepper, tomato sauce, and chicken stock; mix well.
  3. Incorporate white rice into the mixture. Bring to a boil, then reduce to a simmer. Cover and cook for 25–30 minutes or until the rice is tender.
  4. Meanwhile, in a small pan with olive oil, sauté shrimp seasoned with salt, pepper, and Cajun seasoning until cooked through.
  5. Once the rice is ready, stir in the sautéed shrimp.
  6. Serve in bowls garnished with chopped parsley and extra hot sauce if desired.
