  • 1.5 lb beef oxtail
  • 3 garlic cloves (minced)
  • 1 tsp allspice
  • 1 tbsp brown sugar
  • 1 medium onion (chopped)
  • ½ red bell pepper (diced)
  • ½ green bell pepper (diced)
  • 16 oz butter beans (rinsed)
  • 2 tbsp tomato paste
  • 3 cups water
  • 1 tsp cayenne pepper
  • 2 tsp chicken bouillon
  • Pinch of salt and bouillon
  • 4 tbsp cooking oil
  • 23 bay leaves
  • 4 sprigs thyme (or 1 tsp dried)
  • 1 cup baby carrots (or chopped whole carrots)

Instructions

  1. Rinse the beef oxtail with water and lemon; trim excess fat and pat dry.
  2. In a mixing bowl, combine the oxtail, garlic, allspice, brown sugar, onion, bell peppers, butter beans, and tomato paste. Mix well and marinate for at least 30 minutes.
  3. Set your instant pot to sauté mode; add oil and sear the oxtails until browned on all sides.
  4. Remove oxtails and cook onions and peppers in the pot until softened.
  5. Add back the oxtails along with saved marinade juices, bay leaves, and water; stir well.
  6. Pressure cook on high for 20 minutes; allow natural steam release before opening.
  7. Stir in butter beans; simmer until warmed through.
