  • olive or avocado oil
  • chicken or turkey sausage (or spicy Italian sausage)
  • leeks
  • fennel bulb
  • parsnip
  • carrot
  • celery
  • garlic
  • whole tomatoes
  • navy beans
  • chicken stock/broth
  • kale
  • lemon juice

Instructions

  1. Cook the gnocchi according to package instructions and set aside.
  2. In a large pot over medium-high heat, add oil and crumble in the sausage. Brown for a few minutes.
  3. Add sliced leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until tender.
