  • 1 cup pastina pasta (stelline shape)
  • 1 brown onion
  • 2 carrots
  • 2 celery sticks
  • 4 garlic cloves
  • 6 cups vegetable broth (or chicken broth)
  • Salt and black pepper to taste
  • 1 bay leaf (optional)

Instructions

  1. Chop the onion, carrots, celery, and garlic into rustic pieces.
  2. In a large pot, combine vegetable broth and chopped vegetables. Add salt, pepper, and optionally a bay leaf. Cover and simmer over medium-high heat for about 20 minutes.
  3. Remove solids using a slotted spoon or colander, then blend the cooked vegetables with half a cup of water until smooth.
  4. Return the blended mixture to the pot, stir well, and adjust seasonings if needed.
  5. Bring the soup to a boil again, add pastina pasta, and cook for 5-6 minutes while stirring occasionally.
